Milk and Fruit Custard


This recipe originated from a very typical Portuguese recipe “Leite creme”.

Appreciated worldwide, the velvety cream has a strong presence in the Minho Region in Portugal where each family keeps the secret of its confection.

The ingredients used are the simplest one can find: milk, eggs, sugar, some infused spices like cinnamon and lemon peel and some corn starch to help the thickness.

Preparation time: 10 minutes Cook time: 10-12 minutes

1 egg yolk
1 tsp cornstarch
1/2L skimmed milk
30g sugar
2 strips of lemon peel
Cinnamon powder
2 Kiwis
4 Strawberries
1 apple


1. In a bowl, whisk the egg yolks with the cornstarch until the texture is creamy. Add the sugar and whisk until pale yellow. Gradually, add the milk and whisk until well combined.

2. Pour the milk mixture into a sauce pan, add the lemon peel and put on the stove over medium-low heat. Let the mixture thicken, stirring constantly, for about 10 to 12 minutes, until very creamy. Remove from heat and discard the lemon peel.

3. Cut the fruit in small pieces and divide it between four individual serving dishes.

4. . Pour the cream over the fruit and let it cool until ready to serve. Before serving, sprinkle some cinnamon powder on top.

healthy alternative: 

You could always replace the skimmed milk with soya milk. The quantity of sugar has already been reduced in this recipe.
